Oh, that's because a crucifix necessarily has a person on it! Crosses are usually mostly fine in even the more conservative Protestant denominations, but crucifixes are really a Catholic/Orthodox/very old Christian churches thing.

I'm pretty sure most vampire things I've seen only show crosses, not crucifixes?

It's not idolatry if you hold two shotguns in the shape of a cross to ward off vampires, only if one has a figure of Jesus on it.

I'm not sure if it's the asylum owner or Mr. Holmwood/Arthur, but I think it's Arthur Holmwood. He's the last person she mentions before she starts writing about loving 'him' and he is the tall, curly-haired man Mina asked about.

Could be three people asylum owner, Mr. Holmwood and Arthur too or Arthur could be the asylum owner is called Arthur, but she would have mentioned I think, Arthur being Holmwood just makes the most sense to me and her not saying the person she loves would be perfect for her best friend also makes more sense than the alternative.

Lucy is in love with Arthur Holmwood, and Arthur introduced her to the guy who runs the insane asylum, and Lucy thinks the guy who runs the insane asylum would be perfect for Mina, if Mina wasn't already engaged, is how I read it. (Mr Holmwood "often comes to see us", Arthur "says [Dress is a bore] every day" to Lucy, so Mr Holmwood and Arthur being the same person seems more likely than Arthur running the insane asylum.)
